Finally, as a Southerner, I have been redeemed! I made awesome biscuits! Isa’s vegan biscuit recipe is the best ever! L♥VE that they are just drop biscuits!
Lucky for you, Isa has the recipe on her blog – it is from her Vegan Brunch cookbook which I have, it’s great! I followed the recipe as directed except subbed 2 cups unbleached all-purpose flour for the WWPF, used 1 TBS sugar for the spices, and used soy milk. With my 1/4 cup cookie scoop I got 9 of the most amazing biscuits ever, beautifully risen with a nice, soft interior. Seriously folks, in my pre-vegan days, I made many attempts (always careful not to overwork the dough, keeping everything chilled, etc….) at making roll-out biscuits and they were not good. Maybe I’m just a drop biscuit kind of gal. In fact, yes, I am a vegan drop biscuit kind of gal
I have a feeling this recipe is going to get made a lot this winter. Not-vegan husband thought the vegan biscuits were tasty and awesome!
