Hot dang, these puffy pillow pancakes by Isa are freakin’ amazing! And yes, I am a big uber vegan dork because I think I actually teared up when I bit into one of these pancakes. Yes, they are that darn freakin’ good! Mine weren’t as thick and tall as Isa’s, but no matter, they tasted incredible. Isa is a Puffy Pillow Pancake Princess in my eyes, and that is a compliment!
