Vegan Dinner: Home cookin’

Mmmm….. home cookin’……. so happy that traditional home cookin’ can be veganized….  Sadly, our panko bread crumbs had milk powder in them :( but I still forged ahead and made the meal.  I have read in the PPK forum that Trader Joe’s has vegan panko so I will pick some up next time I’m in the area.

I dub this “chick-un fried tofu” with mashed potatoes and pan gravy (pan gravy from Vegan Party) with a side of broccoli and carrots.  (After the photo was taken, I did end up sprinkling some nooch over my steamed veg for the extra boost of B-vitamins).

I used a technique mentioned in one of the recipes in Vegan Diner for the “chick-un fried tofu.”  The tofu is dipped in seasoned flour, next a mixture of soymilk + cornstarch, and last the panko.  Such a crispy crust!  This will be even better next time because I will plan ahead and freeze the tofu for a few days, defrost, then press out excess liquid.  Freezing tofu does change the texture and does make it more chewier.

The mashed potatoes are homemade and I used Earth Balance vegan butter, soymilk, and salt and pepper.

Our bellies were happy after we finished our meal!
