
I admit it. I have a major, serious crush on these vegan pumpkin spice pancakes. As a newbie vegan I am glad they did not contain any “weird” (only weird to me because I have not tried them) egg substitutes. The ingredients were so simple: soy milk, vanilla, brown sugar, pumpkin pie spice*, flour, baking powder, salt, canned pumpkin. And OMG, hubby & I both loved them!
Recipe from Vegan Diner by Julie Hasson. This cookbook has gotten rave reviews online and in the PPK (see side bar for link) cookbook forum.
*I subbed pumpkin pie spice for the individual spices
