Vegan – French Lentil Soup with Herbes de Provence

Yes it’s August, yes it is very hot out, but I can’t help it, I was craving soup.  So I made Robin Robertson’s French Lentil Soup… that was featured online at VegNews, not sure if it was included in the print edition of their magazine or not as I have only bought their most recent issue — but I plan to buy more!

The soup was tasty, two thumbs up from the hubby.  We even made our own veggie stock from scratch (!!) but didn’t have the entire amount we needed for the recipe so we just added in water to make up the difference, so we ended up using 3 cups homemade veggie stock with 2 cups water.  Delish.  Robin Robertson ROCKS and it is so comforting to be able to trust that her recipes are going to come out awesome!

  1. I love French lentils — tasty, but also pretty!!

    Lentils make good burgers. They’re also good cold in a Greek-style salad.

  2. Looks great! If you have 1000 Vegan Recipes try the Persian Noodles with Lentils. I love it. You could even leave out the noodles and eat it like a salad over whatever you want. :)
