Whew, long recipe title but so not an overly complicated recipe. The dressing is amazing and the avocado in the salad totally makes it special! Recipe from Robin Robertson’s Party Vegan cookbook.
The dressing recipe I followed exactly but I adding some extra stuff to the salad. The salad contains: lettuce (of course!), avocado, kalamata olives, red onion, shredded carrot, and some crispy lightly fried extra-firm tofu. I ♥ the Twin Oaks brand!
Chips & salsa and black beans were served on the side. Although next time I might consider adding the beans directly in the salad.
As a side note, I’m sure y’all have noticed lots of food photos on my blog lately rather than stitchy photos. I did not do any stitching during the duration of the NEwVP contest, but still very much felt like I had a creative outlet since I’ve been trying out new recipes in the kitchen. It’s been great and I’m really enjoying my vegetarian lifestyle – hubby has been enjoying the new dishes as well though he is still eating meat/chicken/pork but not as often. I am reading a nutrition book and am learning a lot. I can totally see myself going vegan at some point in the future, it is not so weird and hard as I thought, but I’m not ready yet. I still have some things to learn about nutrition and I don’t want to rush things.
