
Remember these? Mmmm….. didn’t think they could get any better, but this time we added some very finely minced red bell peppers, no more than a scant 1/4 cup. OMG. Love them! Served with black beans. Corn + black beans = ♥essential amino acids♥ (I definitely need to read up on vegetarian/vegan nutrition, I bought this book to help me out — no plans to go vegan yet but I’m thinking about it…….)
