
Oh so delicious savory corn and yogurt cakes from Lukas Volger’s Vegetarian entrees that won’t leave you hungry. I made homemade guacamole to go with. I just take a ripe avocado, mash it a bit, and then add chopped tomato, fresh lime juice and a little bit of salt, sometimes I add garlic powder, sometime not.
The corn cakes were accompanied by some fresh fruit and deli-style macaroni salad from Jolinda Hackett’s Cookouts veggie style. The only tweaks I made to the macaroni salad recipe was adding in a bit more veg and some other veg not listed in the recipe.
Hubby said next time I should serve beans with the corn, it’s good nutrition because you get all your essential amino acids together.

Yummo!!! Black bean salsa would be delicious with that, with the guac alongside.
I hope a day comes when I’m able to eat corn again. I could care less about the crappy corn derivatives (corn syrup, citric acid, and at least another 100 corn derivatives in everyday foods), but oh how I miss being able to eat corn itself and cornmeal.

I’m less than in love with corn fritters due to my husband’s undying love for them (seriously, so many corn fritters in my lifetime) BUT maybe if I can convince him to make me some with guac on top and some beans, I can find that love again. Thanks for the rec.
@glenda, mmmmm, you are right! And with my new confirmed peanut and tree nut allergy, I’m not missing too much since I feel so much better now! But I miss the idea of eating things that I rarely eat like pecan pie or nutella.
It must be so challenging to keep up with all those corn derivatives, but at least you know now what greatly upsets your system and you can take of yourself so much better now.

@Kitten, these are actually a bit cake-y and they are only “fried” in such a tiny bit of oil. So they while they are slightly “heavy” due to all the yummy corn inside, they actually feel and taste “light.”

Served with black beans. Corn + black beans = ♥essential amino acids♥ (I definitely need to read up on vegetarian/vegan nutrition, I bought this book to help me out — no plans to go vegan yet but I’m thinking about it…….)
