Vegan Dinner: pineapple and scallion brown rice with Szechwan green beans and shallots

Tonight’s dinner:  pineapple and scallion brown rice with Szechwan green beans and shallots.  Incredibly tasty and very satisfying!  Two thumbs up again from hubby!  I scaled back the amount of green beans and red peppers and also included asparagus, broccoli, and carrots.

Veggie party in the skillet, this photo was taken before a small amount of sauce is added…… the sauce contains soy sauce, sherry, sriracha (I bought mine at Publix but recently saw it at Target for $1 less!), fresh grated ginger, and a bit of cornstarch.

Mmm….. on my plate and ready to eat!
